Aims and objectives

  • To improve understanding of meat quality issues
  • To investigate the effects of variable DLWG, breed, slaughter weight and slaughter age on the eating quality of pork.  

Findings

  • Back fat depth at P2 and birth weight, which appear to be interrelated, have a greater influence on meat quality than average daily gain
  • The variability in DLWG (over a 300g/day range) did not explain the variability in meat quality that was observed which was itself high and should be of concern.
